Gluten Free Sweet Potatoes and Sausage

I came up with this dish after eating a similar (and more fattening) dish at the State Fair.  The sausage is my addition.

1        package of Hillshire Farm Smoked Turkey Sausage, cut in 1 inch slices

1        large onion, sliced (or 1 cup chopped frozen)

1        large sweet potato or 2 small

2-3    medium golden or white  potatoes

          Canola oil

     Cook the sweet potato in the microwave for 2 minutes and allow to cool.   Peel and cut into bite size chunks.  Cut other potatoes into bite sizes pieces, leaving skin on.

     Line the bottom of a 9x13 baking dish with Reynolds Release foil.   Mix potatoes and onion in the 9x13 dish and drizzle with 3 Tbsp of oil.   Mix to coat and season with pepper to taste.  (Skip the salt because the sausage is really salty.)

     Bake for 30 minutes at 375 degrees.  Stir at 15 and 30 minutes.

     Add sausage and bake another 15-20 minutes until potatoes are tender.
