Baked Mozzarella Sticks

6 Pack of individually wrapped Mozzarella Cheese sticks (Frigo brand is GF)

1 medium egg beaten or use an Egg Beater type product

1 bag GF potato chips (I used Lay’s Ruffles)

1 Tbsp. GF Italian Seasonings (I used McCormick brand)

1 Tbsp. corn starch

 

Preheat oven to 400.  Crush potato chips to a very fine consistency (can use a blender).  Add Italian seasonings & corn starch.  Put dry mixture in a separate pan.  One at a time coat cheese sticks with egg & put in dry mixture.  You can dip and coat once or twice depending on your preference.  Spray cookie sheet with cooking spray (Pam is GF).  Put cheese sticks at least 1 inch apart and bake for 8-10 minutes.  Serve plain or with your favorite GF marinara sauce (I used Ragu Pasta Sauce heated on low), or could dip in ranch dressing.  (Kraft and Wish Bone are GF not Hidden Valley).  Serves 6.  If preparing for a group double to quantity needed.
