1 tsp salt

2 yeast cakes or 2 tblsp dry yeast granules

1 cup lukewarm water (105 to 115 degrees)

In bowl of your heavy duty mixer, put flours, dried milk, xanthan gum and salt.  In a separate bowl crumble the yeast into the lukewarm water with the tblsp of sugar added.  Melt the shortening in the hot water.  With the mixer on low, blend the dry ingredients.  Pour in the hot water and shortening, blending to mix.  Add the egg whites, blend again, then add the yeast mixture.  Beat on high speed for 4 min.

Spoon half the dough onto a greased pizza stone, cover with saran wrap.  Spray top of saran wrap with Pam and spread dough on stone with edges turned up a bit.  Repeat on second stone.  Fill with favorite pizza sauce.  Bake in preheated 400 degree oven for 20-22 minutes.
