Impossible GF Pumpkin Pie

¾ c. sugar                                          2 eggs

½ c. GF Pantry Quick Mix                  1 can (16 oz.) Libby’s Pumpkin

2 Tbsp. margarine or butter                 ½ - 1 tsp. cinnamon and 1/8 tsp. nutmeg

1 can evaporated milk                         2 tsp. GF pure vanilla extract (Adam’s Best or McCormick are GF)

Heat oven to 350.  Grease a 9-10 inch Pyrex pie pan (I just spray heavily with Pam).  Beat all ingredients until smooth, (1 minute in a blender or 2 minutes on high with a hand mixer).  Pour into pie plate.  Bake until knife inserted in center comes out clean; 50-55 minutes.  Garnish with Cool Whip if desired.

The GF Pantry Quick Mix product can be used exactly like Bisquick.  Every one of my old Bisquick recipes I have used it with turns out beautiful substituting this product.  Currently you can order this by mail or Healthy Approach carries it.
