Spanish Rice

˝ cup sliced onion

1/3 cup diced bell pepper

2 TBLS oil

1 ˝ cups canned tomatoes

1 cup water

1/8 tsp pepper

1 ˝ tsp sugar

1 bay leaf

˝ cup Uncle Ben's long grain rice

Sauté' onion & bell pepper in oil.  Add tomatoes, water and seasonings.  Bring to a boil.  Stir in uncooked rice.  Reduce heat & cover.  Cook slowly for approximately 30min until rice is tender & liquid absorbed. 

(Chef’s note:  However at your house I cheated and used 2 cans Hunts Tomatoes with green peppers celery & onions heated that with 1 tsp. chicken bouillon 1cup water, 1tea oregano, 1cup of rice-dash of garlic powder & paprika.  It's not too hard either way.)
